VEGETABLE CUTLETS

  • Potatoes – 2 large

  • Carrots -1 large

  • Peas – ½ cup

  • Green chillies – 2

  • Ginger -3/4 tsp

  • Onions – 1 small

  • Lime – 1 medium sized

  • Salt

  • Bread crumbs- 6 tbls

  • flour – 2 tbls ( any -- besan/rice flour/corn flour)

  • Boil and mash potatoes. Chop carrots and boil.

  • Boil peas. Cut green chillis and ginger.

  • Cut onions finely and mix all the ingredients with salt breadcrumbs and lime juice. The dough should not be sticky. If needed add more breadcrumbs to make it less sticky.

  • Make small balls of the mixture and pat each ball into flat round pieces. Make slightly thin batter of besan or rice flour. Dip each patty in this batter on both sides. Pat these pieces in bread crumbs and shallow fry them on tava.
