KALA MASALA

  • Coriander seeds –4 cups

  • Coconut slices or desiccated coconut – 1 cup

  • Sesame seeds – ½ cup

  • Cumin seeds – ¼ cup

  • Sahajeera – 3 tsps

  • Cloves –2 tsps

  • Cinnamon sticks – 4-5 sticks

  • Hing -- 2 tsps

  • Dagadphool – 2-3

  • Turmeric pwd – 1 tsp

  • Chilli powder – ½ cup

  • Salt - ½ cup

  • Oil to fry

  • Kuskus – 2 tsps

  • Mustard seeds – 1 tsp

  • Methi seeds – 1 tsp

  • Fry cloves,cinnamon,cumin,shajeera,bay leaves,dagadphool,methi,mustard, coriander seeds separately and keep aside

  • Roast sesame seeds separately.

  • Grind dry coconut, sesame seeds and hing separately.

  • Grind all the ingredients and sieve them.

  • Mix all the above ground ingredients and sieve again.

  • Mix turmeric, chilli powder and salt.
