Usha Charloo's Recipes

KALA MASALA
-
Coriander seeds –4 cups
-
Coconut slices or desiccated coconut – 1 cup
-
Sesame seeds – ½ cup
-
Cumin seeds – ¼ cup
-
Sahajeera – 3 tsps
-
Cloves –2 tsps
-
Cinnamon sticks – 4-5 sticks
-
Hing -- 2 tsps
-
Dagadphool – 2-3
-
Turmeric pwd – 1 tsp
-
Chilli powder – ½ cup
-
Salt - ½ cup
-
Oil to fry
-
Kuskus – 2 tsps
-
Mustard seeds – 1 tsp
-
Methi seeds – 1 tsp
-
Fry cloves,cinnamon,cumin,shajeera,bay leaves,dagadphool,methi,mustard, coriander seeds separately and keep aside
-
Roast sesame seeds separately.
-
Grind dry coconut, sesame seeds and hing separately.
-
Grind all the ingredients and sieve them.
-
Mix all the above ground ingredients and sieve again.

Mix turmeric, chilli powder and salt.
