FRUIT CAKE

  • All purpose Flour – 11/4 cup

  • Baking soda – ½ tsp

  • Salt – 1 tsp

  • Butter – ½ cup

  • Sugar – ½ cup

  • Brown sugar – ½ cup

  • Eggs – 2

  • Raisins – 1  cup

  • Walnut – ½ cup

  • Cherries in syrup  -- ½ cup

  • Mixed spice – ½ tsp(cinnamom -1/4tsp+ cardamom 1/4tsp + 1 clove pwd)

  • Vanilla essence – 1 tsp

  • Make caramel syrup by heating brown sugar with water. Keep stirring until the mixture turns brown.

  • Add half cup warm water to the caramel syrup.

  • Add some all purpose flour to the dry fruits.

  • Beat butter and sugar until a smooth buttery paste is formed.

  • Beat egg white and yellow part of the eggs separately.

  • Add both these mixtures to the butter and sugar  and dry fruit mixture a little at a time.

  • Add all purpose flour and mix nicely.

  • Add baking powder, vanilla essence.

  • Bake the mixture in the  oven for 40 mins to 1 hour on 160 degrees.
