FRUIT CAKE

All purpose Flour – 11/4 cup

Baking soda – ½ tsp

Salt – 1 tsp

Butter – ½ cup

Sugar – ½ cup

Brown sugar – ½ cup

Eggs – 2

Raisins – 1 cup
-
Walnut – ½ cup
-
Cherries in syrup -- ½ cup
-
Mixed spice – ½ tsp(cinnamom -1/4tsp+ cardamom 1/4tsp + 1 clove pwd)

Vanilla essence – 1 tsp

Make caramel syrup by heating brown sugar with water. Keep stirring until the mixture turns brown.

Add half cup warm water to the caramel syrup.

Add some all purpose flour to the dry fruits.

Beat butter and sugar until a smooth buttery paste is formed.

Beat egg white and yellow part of the eggs separately.

Add both these mixtures to the butter and sugar and dry fruit mixture a little at a time.

Add all purpose flour and mix nicely.

Add baking powder, vanilla essence.

Bake the mixture in the oven for 40 mins to 1 hour on 160 degrees.
