BROCCOLI SOUP
Broccoli
-
Onion – 1 medium
-
Leek and spring onion – 8 ounces
-
Potato unpeeled – 1
-
Bay leaf – 1
-
Frozen peas or corn – ¼ cup
-
Parsley – 1tbls
-
Pepper – 1 tsp
-
Salt
-
Cream ( 2 tblsp)or cashew (10) or milk ( ¼ cup)
-
Heat oil and add onions and fry until they turn translucent.
-
Add leek and potatoes and cook for 10 mins.
-
Add broccoli and peas and cook for 10 mins.
-
Remove bay leaf.
-
Grind all the cooked ingredients.
-
Soak cashew for 10 mins in a little water or milk and grind. Add this to the soup.
-
Cream or plain milk can also be added instead of cashew.
