BROCCOLI SOUP

Broccoli
  • Onion – 1 medium

  • Leek and spring onion – 8 ounces

  • Potato unpeeled – 1

  • Bay leaf – 1

  • Frozen peas or corn – ¼ cup

  • Parsley – 1tbls

  • Pepper – 1 tsp

  • Salt

  • Cream ( 2 tblsp)or cashew (10) or milk ( ¼ cup)

  • Heat oil and add onions and fry until they turn translucent.

  • Add leek and potatoes and cook for 10 mins.

  • Add broccoli and peas and cook for 10 mins.

  • Remove bay leaf.

  • Grind all the cooked ingredients.

  • Soak cashew for 10 mins in a little water or milk and grind. Add this to the soup.

  • Cream or plain milk can also be added instead of cashew.
