Usha Charloo's Recipes

ALMOND BARFI

Almond powder –2 cups

Carnation milk powder –2/3 cup
-
Sugar – 11/2 cups
-
Water – 2/3 cup
-
Ghee – ½ cup
-
Saffron -- a few strands soaked in milk

Soak almonds in water overnight.

Peel the skin and grind with very little milk.

Boil sugar with little water till sugar melts.

Add almond powder immediately.

Add saffron and ghee and keep stirring on low fire until the mixture turns thick. Now add carnation milk powder. Stir it and add almond extract ( 1 tsp).

Take the pan off the stove. Grease a wooden board and place the mixture ball on board and roll it out. Once it cools cut them into diamond shapes.
