ALMOND BARFI

  • Almond powder –2 cups

  • Carnation milk powder –2/3 cup

  • Sugar – 11/2 cups

  • Water – 2/3 cup

  • Ghee – ½ cup

  • Saffron -- a few strands soaked in milk

  • Soak almonds in water overnight.

  • Peel the skin and grind with very little milk.

  • Boil sugar with little water till sugar melts.

  • Add almond powder immediately.

  • Add saffron and ghee and keep stirring on low fire until the mixture turns thick. Now add carnation milk powder. Stir it and add almond extract ( 1 tsp).

  • Take the pan off the stove. Grease a wooden board and place the mixture ball on board and roll it out. Once it cools cut them into diamond shapes.
